We are currently looking for an experienced Head Chef to join our team at our busy Canary Wharf restaurant. Camino is a place to enjoy ‘The life and soul and tastes of Spain’. The right candidate will have experience within a similar role, with enthusiasm, drive and passion for fresh food. You will be able to thrive under pressure in the busy environment that comes with this site.
1.Cooking practises must be performed to the highest standards.
2.To maintain prescribed margin levels as defined by the executive chef and the directors.
3.To maintain and promote a positive working environment for chefs in the kitchen and good working relations with floor staff, bar staff and administrative staff of the company.
4.Implement and control a good hygiene practices within the kitchen
5.Menu planning – Seasonal specials & buffets, including outside catering & liaising with prospective clients when requested. Make food recipe cards with methods available for the chefs within the kitchen.
6.Menu costing – to cost out all the seasonal specials prior to approval & launch. This also involves on-going monitoring of prices & invoices to ensure increases in product prices are reacted to.
7.Weekly FACs – compiling weekly FACs to produce report to an Executive Chef and Food Operations manager.
React to this with any GP issues & wage %.
(Food ledger records and wage % spread sheet will be supplied and training given).
8.To act as a spokesman for the restaurant as and when required.
9.Hiring & disciplinary procedures.
10.To liaise and work with an Executive Chef, Ignacio Del Campo, regarding the purchasing, menu changing/costing, GP monitoring, cost control of consumables, maintenance and any other food operations.
The salary will be £30,000 a year including Tronc for 7 shifts a week.
